Brown Lentil Soup with Spinach and Carrots

Vegan!
Ingredients
1 tablespoon
Olive oil
1
Sweet onion (chopped)
1 clove
Garlic (crushed)
1 cup
Brown lentils
4 cups
Boiled water
2 or 3
Carrots (chopped)
16 ounces
Chopped spinach
1 teaspoon
Cumin powder
Salt to taste
Lemon juice to taste
Step by Step Instructions
- Saute the onion and garlic in the olive oil in a pot over medium heat. Add the carrots and saute for 2 minutes.
- Add the lentils and boiled water, then cover and let simmer on low for 30 minutes.
- Add the spinach, cumin, and salt, then cover the pot again and let simmer for 10 minutes. If desired, add lemon juice before serving.
