Slow Cooker Peach Short Ribs

Ingredients
3 1/2 pounds Bone-in beef short ribs
OR 2 pounds of boneless short ribs
1/4 cup Flour
1 tablespoon Kosher salt
1 tablespoon Pepper
4 tablespoons Vegetable oil
1/4 cup Fresh ginger root (peeled & minced)
4 large Garlic cloves (minced)
4 Peaches (pitted and roughly chopped)
1 bunch Scallions
OR green onions
1 cup Beef broth
1 cup Hoisin sauce
1/4 cup Soy sauce
2 tablespoons Chili paste
Sticky rice for serving

Step by Step Instructions
  1. Mix the flour, salt, and pepper together, then lightly coat the ribs with the mixture. Working in batches, brown the short ribs on all sides in a skillet over medium heat, then transfer them to a slow cooker
  2. Using the same skillet, still at medium heat, add and stir together the garlic, ginger, and peaches.
  3. Chop up the scallions/green onions, discard the tough roots and reserve the green tops for garnishing. Add the white parts, the beef broth, hoisin sauce, soy sauce, and chili paste to the skillet.
  4. Bring to a boil, then pour the sauce over the ribs in the slow cooker. Cover, then cook for 8 to 9 hours.
  5. Serve the ribs with sticky rice, and garnished with minced scallion/green onion tops.
