Low Country Boil

Ingredients
8 quarts Water
OR beer
OR chicken stock
OR fish stock
Or a combination of them
1/2 cup Old bay seasoning
Hot sauce to taste
1 pound Red potatoes (quartered or whole)
2 or 3 Sweet onions (quartered)
1 pound Smoked sausage (cut into half inch pieces )
4 ears Corn (each ear cut into three pieces)
2 pounds Shrimp (peeled or unpeeled)
2 pounds Crab claws and/or legs (optional)
GARNISH SUGGESTIONS INCLUDE:
Red pepper flakes
Fresh chopped parsley
Lemon slices/wedges
OTHER BROTH MIX-IN SUGGESTIONS INCLUDE:
Sliced lemons
Heads of garlic
Celery
Leeks
Tomatoes
Clam juice
Fish sauce
Boiled eggs
ADDITIONAL SEAFOOD MIX-INS INCLUDE:
Blue crab
Different cuts of fish

Step by Step Instructions
  1. Fill a large pot with the liquid or liquid combination of your choice, then add the old bay seasoning and hot sauce.
  2. Add the potatoes and let them cook for 5 minutes. Add the onions and sausage, bring to a boil, and let cook for 10 minutes.
  3. Add the corn to the pot and let cook for 10 more minutes. Add the shrimp and crab (if using). Cook for 3 minutes, then remove the pot from the heat.
  4. Strain and discard the liquid, then serve the contents of the pot on a large platter garnished with red pepper flakes, lemon slices/wedges, and chopped fresh parsley.
