Blueberry Salsa

Serves: 3 cups
Vegan!

Ingredients
1 large Tomato (quartered)
1/4 of a medium-sized Onion (cut into large pieces)
1/4 cup Fresh cilantro leaves
1/2 of a Jalapeno pepper (seeded or not)
1 clove Garlic
1 1/2 cups Blueberries
2 tablespoons Lemon juice
Sea salt to taste

Step by Step Instructions
  1. Put the tomato, onion, cilantro, jalapeno, and garlic clove into a food processor and pulse until the mixture is chunky.
  2. Add the blueberries and lemon to the food processor and pulse again until they have been incorporated, but the mixture remains solid enough for dipping.
  3. Transfer to a bowl, season to taste and stir, then cover and chill until ready to serve.
